Prep and freeze this homemade takeaway and end the week with a freezer meal that feels like take-away! Meatball Subs are a family favourite!
Ingredients
2 packets of the bake at home small baguette sized buns or 2 large baguettes.
1kg meatballs
2 tablespoons garlic paste
1 tablespoon mixed herbs, finely chopped
1 & 1/2 cups mozzarella cheese
1 cup butter
1 cup spaghetti sauce (can use a jar in a sauce if easier – heck, it’s Friday!)
Method
Mix the garlic and herbs with the butter.
Slice the baguettes in half, length ways, spread them generously with the butter mixture.
Place in sealed clip seal bags, label and freeze.
Put grated mozzarella in its own clip seal bag. Label. Freeze.
Meatballs can be placed with the spaghetti sauce into a large clip seal bag. Label then freeze.
To cook, place baguettes on trays in the oven under the grill on medium low to heat and crisp up on top – keep an eye on them, they won’t take long.
Cook the meatballs in spaghetti sauce in a saucepan or microwave. Make sure they are cooked through and heated really hot in the centre. If you need to add more spaghetti sauce do so.
Remove the baguettes and fill with a few meatballs and sauce, top with mozzarella, return to the grill until cheese has melted on top.
