This is a simple and quick recipe and MOST important requires minimal washing up – a perfect afternoon teacake. To make it something a bit extra special – ‘unusual’ – drizzle orange zest icing over the top – takes it to a whole ‘nother level.
Ingredients
1 orange, very roughly chopped, skin on
3 eggs
180g butter, melted
1 cup raw sugar
1 1/4 cups self raising flour
1/4 cup cocoa powder
2 tablespoons poppy seeds.
Method
Preheat your oven to 180 degreesC and grease a cake tin of any shape
Pop your orange pieces in the food processor and whizz until very broken down
Pop in all other ingredients except the poppy seeds and whizz until combined nicely
Stir through the poppy seeds then pour cake mixture into your prepared tin and bake for 50-60 minutes.
The cake is ready when the sides of the cake have come away from the sides and the a skewer comes out clean when poked in the middle.
