honey nut brittle

 

 

Ingredients:

160g  butter

1/2 cup honey

1 cup nuts (I used pecans)

Method:

Line a biscuit tray with baking paper.

In a heavy based saucepan, over a medium/high heat, cook the butter and honey, stirring continuously.

Use a thermometer to cook mix to hard crack stage (300 degrees F)

It will take around 10 minutes and will be very, VERY hot!

If you don’t have a thermometer,  keep a bowl of cold water near the stove, drop a few drops of the honey/butter into the cold water. When it reaches ‘hard crack’ stage, it will get hard when it hits the water. 

Stir in the nuts.  Pour onto biscuit tray.

Refrigerate until completely cold.

Break into shards for gifting or a super sweet after dinner treat!
