While we always have a large tub of Greek Yoghurt in the fridge, I don’t always have time to prepare dessert. This is much to my own detriment, as I am a complete dessert fiend and once the children are (hopefully) quietly sleeping for (some of) the night, I need a sweet hit of something and I need it quickly.

Here are 5 ways to elevate Greek Yogurt to a next level dessert worthy of your sweet cravings.

Yoghurt Brulee

This is by far my favourite of all the preparations. You will need however many ramekins for the number of people you are serving.

Ingredients and How-To:

  1. Line the bottom of each ramekin with berries, be they blackberries, raspberries , strawberries etc.
  2. Then fill the ramekin with Greek Yogurt up to the inner edge. Over each ramekin of yogurt scatter over 1 tablespoon of sugar. You can use brown, caster or a combination of both (which is actually the best for flavour).
  3. Using a small blow torch (they are really inexpensive to buy and are really handy things to have around the kitchen), caramelise the sugar carefully taking care not to let any burn spots form.
  4. Allow to sit for a couple of minutes before consuming.

Yoghurt Bark with Fruit and Nuts

Ingredients and How-To:

  1. Spread 2 cups of Greek Yogurt on flat baking sheet that has been lined with baking paper or a silicon mat. Note that this tray needs to fit in your freezer, so test it out first.
  2. Scatter the yogurt with a couple tablespoons of dried fruit such as dried sour cherries, cranberries and diced apricot and some toasted almonds and pistachios.
  3. Freeze until firm (give it an hour depending on the capacity of your freezer). Break up into pieces and consume.

Chocolate Greek Yoghurt Mousse

Ingredients and How-To:

  1. Melt 250 grams dark chocolate gently in 1 cup of milk. Stir together until a smooth liquid forms with no lumps or graininess.
  2. Drain 2 cups of Greek Yogurt through a fine sieve to drain excess liquid and then scrape into a bowl.
  3. Whip lightly with a whisk before whisking in the chocolate mixture. Whisk thoroughly but gently to combine.
  4. Sweeten with agave or other liquid sweetener if desired.
  5. Chill for an hour before consuming.
