Think soft banana halva! YUM! I’m currently trying to eat more raw foods and can’t survive without some yummy sweet treats, especially when I am denying myself chocolate (eeeekkk!).
This fudge is so easy and only needs three ingredients and no cooking – could we get any easier?!
Ingredients:
1 large ripe banana, mashed
1 cup hulled tahini
8 medjool dates, pitted
Method:
Place all ingredients into food processor and whizz until it resembles a gooey fudge consistency and the dates have broken down completely. You do not want to see chunks of the date still in the mixture. Depending on the power of your food processor it may take longer for it to reach the right consistency.
Line a square cake tin with baking paper so that it hangs over the sides (this makes it easier to lift out once fudge has set). Spoon the mixture into the tin and smooth out to the edges trying to make it even – the mixture is quite gooey so a spatula makes it easier to spread.
Place the tin in the freezer and leave to set for at least 1 hour before cutting. The fudge is best kept in the freezer.
