Chia Pudding with chocolate crunch and blueberries

Crazy easy, chuck it all together and leave it in the fridge for when you’re hungry. Oh, and it has no sugar.  Hooray!


1 tin coconut cream
3 teaspoons vanilla essence
1 cup frozen blueberries
3 tbspns chia seeds
2 teaspoons cacoa nibs or your choice of choccy bits


In a bowl pour in the coconut cream, vanilla essence.  Mix through well then stir through chia seeds.  Add and stir through remaining ingredients and pop bowl in the fridge for an hour or so for the chia seeds to swell and for the flavours to infuse.
