Ingredients:
225g brown sugar
225g butter
225g currants
225g sultanas
115g raisins
115g mixed peel
115g plain flour
115g soft breadcrumbs
1/4 teaspoon bi-carb soda and
1/4 teaspoon nutmeg
4 eggs
Pinch of salt
1/2 teaspoon mixed spice
Chopped almonds
6 tablespoons of brandy.
Method:
In a large bowl, mix the dried fruits, nuts and peel.
Set a big pot of water to simmer gently, ready for the pudding.
In a second bowl, cream butter and sugar very well, add beaten eggs and brandy.
Stir all fruits, peel and nuts in well.
Add crumbs, sifted flour, soda and spices.
Mix well.
Place in a pudding basin. Cover and put in boiling water.
Cook for around 5-6 hours or longer if needed.
