Take some plain old chicken breast.  Let it rest a while in this simple marinade, then grill, pan fry or BBQ it, brushing extra glaze over it as it cooks.  Even if it’s freezing cold and raining outside, this dish has the taste of Summer stamped all over it, and will have you forgetting the Winter blues in no time!

Ingredients:

1/2 cup melted coconut oil

1/2 cup lemon juice

2 tablespoon water

1 tsp paprika

2 teaspoons salt

1 tablespoon honey

Method:

Combine everything in a jar.  Shake well.  You can marinade in this for a short time (if you refrigerate it, the coconut oil will harden), or simply brush it over the meat while it’s cooking.  The honey will give the meat a lovely, caramel colour.  Remember, it’s always ‘caramelised’, never burned!
