Recipe by Lucy Birchley
Lucy brought this into my other place of work a couple of weeks ago. I asked for more. Then I had to tickle the recipe out of her. It is that good.
Ingredients
500g of almond butter
3 eggs
1/3 cup of agave/honey
1 tea spoon of vanilla essence
1 cup of cacao or cocoa powder
2-3 tea spoons of baking powder
1 pinch of sea salt
½ cup cranberries
½ cup walnuts.
Method
1.Beat the eggs until combined and fluffy.
2.Add the agave, vanilla essence and stir.
3.Add cocoa, baking powder, salt, and combine.
4.Once the baking powder has activated (there will be little bubbles in the mixture) add the almond butter, nuts and cranberries and stir it in.
5.Grease a large pan and cook for 25 min at 160 degrees, or until it is set to your desired fudgyness.*
*Please note: the longer this cooks the more cake like and crumbly it will become.

Can you please advise at what stage the walnuts and cranberries are added? They’re in the ingredient list but seem to be missing from the method.
