Frozen Banana Snacks: 4 ways

Bananas are cheap and versatile and without doing very much to them at all can be transformed into something healthy and something decadent.    As the weather heats up for us, these make some lovely chilled snacks to cool down with in the afternoon.

 Ingredients

5 bananas

Chopped mixed nuts

Desiccated coconut

Peanut or other nut butter

Milk or plain chocolate, finely grated

 Method

Cover a few baking trays with parchment paper.

1. Slice one banana into ¼ inch thick pieces.

Sprinkle a layer of mixed nuts onto a plate.

Roll each banana slice in the nuts until it is covered.

Place each banana slice onto a baking tray.

2. Repeat 1 ,as above, using desiccated coconut instead of nuts.

3. Repeat 1, using grated chocolate.

4. Chop two bananas into ¼ inch slices. Spread one slice with a layer of peanut or nut butter and place another slice on top.

      Place each banana ‘sandwich’ onto a baking tray.

 Place each baking tray in the freezer and let the banana slices freeze for about three hours. At that point they can be transferred to sandwich bags to be stored in the freezer until needed.
