This is an incredibly simple gift to make- yet it looks wonderfully luxurious, and will please anyone who receives it this Christmas. Oh, and while you’re at it- remember to make a jar for yourself!
The herbs and olive oil impart a wonderful flavour to the goats cheese; serve with a green salad or spread on a slice of crusty bread.
Makes 1 pint.
Ingredients
Approximately 300g firm, fresh goats cheese, whole or in pieces
12 black peppercorns
4 fresh or dried bay leaves
4 sprigs of fresh thyme
3 sprigs of fresh rosemary
450ml olive oil
Method
Put all the ingredients into a dry, sterilized jar large enough for the cheese to be covered with the oil; make sure the cheese is not too tightly packed.
Let the cheese marinate for a week before eating.
Store in a cool, dark place.
The cheese will keep for 1 to 2 months.
How to Sterilize Glass Containers
You can easily sterilize bottles, containers and their lids by running them through the dishwasher.
Otherwise, just wash everything in hot, soapy water, rinse well, and then boil in clear water for five minutes.
Make sure the containers are completely dry before you fill them.
