Honey & Ginger Syrup

This is a quick and easy little pick-me-up just perfect for having on hand at this time of year.

I love it stirred into warm water with lemon juice, but it is equally at home in a big jug of sparkling water and lemon juice.

I reduced the amount of ginger to suit my tastes and so that my four year old can enjoy a glass of ‘special tea’ when he’s feeling under the weather.  If you like a really strong ginger hit, feel free to add as much as you like.

Kept in the fridge, this will last for a few weeks.

Ingredients:

1 cup honey

1 cup water

Finely grated ginger to taste.

Method:

Combine the honey and water in a medium sized saucepan.

Bring to a boil and simmer until the liquid has begun to thicken.

Add the ginger and leave, off the heat, to soak for about 30 minutes.

Strain the mix through a fine sieve and pour into a jar or other container.

Allow to cool completely, then store in the fridge.

To serve:  spoon the syrup (to taste) into warm water and freshly squeezed lemon, or with chilled sparkling water and lemon….maybe with a dash of vodka?
