Iced Apple and Mint Tea

This tea is wonderfully refreshing and the kids also love it (it’s a great alternative to commercial, sugary drinks). The original recipe calls for Ceylon tea-which complements the mint well, but I also make this with green tea and it is delicious!

Serves 4

 Ingredients

3 tbsp fresh mint leaves

Zest of one lemon

2 Ceylon or green tea bags

600ml boiling water

400ml unsweetened apple juice

Juice of one lemon

20 ice cubes

4 sprigs of mint for garnish

 Method

Place the mint leaves, lemon zest and tea bags into a teapot or container and pour boiling water over the top.

Leave to infuse for 20 minutes.

Pour the tea into a jug and add the apple juice, lemon juice and 10 ice cubes.

Divide the remaining ice cubes into four glasses and pour the tea over.

Serve with a sprig of mint.
