I psyched up to do a big lasagne last week and when I nonchalantly swung open the larder door to grab a box of lasagne sheets, what I found was no box of lasagne sheets. SHEEET.
I asked the MamaBake community (in a cleverly disguised way) what I might use to make a pasta-free lasagne? Could I use, say, a layer of uncooked spaghetti instead? As usual, the MamaBake Community answered with a wide range of genius options that we just had to share with you now in this list.

Use uncooked rice paper sheets

Use slices of prosciutto to form a meaty layer

Use flatbreads for the pasta layers

Forget about the pasta sheets! Use tortillas!

Slice up zucchini, pumpkin, eggplant and/or sweet potato, saute for about 30 seconds and layer instead of pasta

Use pancakes instead of pasta sheets.
I ended up using a mixture – one layer was finely sliced pumpkin and zucchini and the second layer was rice papers. It was absolutely delicious and perfect.

Home made pasta recipe:
Ingredients
100g flour
1 egg.
Method
form a dough and roll out thinly. Cut into whatever you want. Drop in boiling water and scoop out after a couple of mins.
