fridge fudge
These are a hearty lot!  A yummy little sweet treat for the mid afternoon knock down energy slump and excellent with a nice cuppa char.
They don’t need the oven just to set in the fridge after a little action on the stove top.
Add whatever dried fruit or nuts/seeds you like.

Ingredients

  • 1 cup peanut butter
  • 1/2 cup honey
  • 1/2 cup coconut oil
  • 2 cups oats
  • 1 cup desiccated coconut
  • 1 cup dried cherries
  • 1/4 cup chopped nuts (or seeds.  I used pepitas)
  • 1 cup almond meal
  • 1 teaspoon vanilla extract.

Method

Melt the peanut butter, honey, and coconut oil over medium-low heat in a heavy bottomed pot on the stove.

Once all nicely melted together, take off the heat and stir in your oats,  coconut, cherries, nuts, almond meal and vanilla.

Pour the yummy mixture into a greased 9×13 pan and pop in the fridge to set.

After an hour or so, cut it into bars. Store in the fridge.
