- 1 cup peanut butter
- 1/2 cup honey
- 1/2 cup coconut oil
- 2 cups oats
- 1 cup desiccated coconut
- 1 cup dried cherries
- 1/4 cup chopped nuts (or seeds. I used pepitas)
- 1 cup almond meal
- 1 teaspoon vanilla extract.
Melt the peanut butter, honey, and coconut oil over medium-low heat in a heavy bottomed pot on the stove.
Once all nicely melted together, take off the heat and stir in your oats, coconut, cherries, nuts, almond meal and vanilla.
Pour the yummy mixture into a greased 9×13 pan and pop in the fridge to set.
After an hour or so, cut it into bars. Store in the fridge.

Super tasty! I used cranberries instead of cherries and walnuts and sesame seeds for the nut/seed portion. And topped with a drizzle of dark chocolate. Mmmm 🙂
These are amazing! They’re my new obsession 🙂
