the-giving-guide-goats-curd

This is an incredibly simple gift to make-  yet it looks wonderfully luxurious, and will please anyone who receives it this Christmas. Oh, and while you’re at it-  remember to make a jar for yourself!

To serve:  The herbs and olive oil impart a wonderful flavour to the goats cheese; serve with a green salad or spread on a slice of crusty bread.

Makes 2 cups

Ingredients

Approximately 300g firm, fresh goats cheese, whole or in pieces

12 black peppercorns

4 fresh or dried bay leaves

4 sprigs of fresh thyme

3 sprigs of fresh rosemary

450ml olive oil

Method

Put all the ingredients into a dry, sterilized jar large enough for the cheese to be covered with the oil; make sure the cheese is not too tightly packed.

Let the cheese marinate for a week before eating.

Store in a cool, dark place.

The cheese will keep for 1 to 2 months.
