zucchini gratin recipe

I had about a kilo of zucchinis in my fridge that needed using up so this seemed like a great idea.  The kids devoured it too.


About one kg of zucchinis, sliced
Two tbsns butter
Two hundred grams cheese, grated
One hundred grams feta, crumbled
One hundred and twenty five mls milk
One hundred and twenty five mls cream
Two eggs, lightly beaten
Salt and Pepper


  1. Preheat oven to one hundred and eighty degC
  2. Melt the butter in a frying pan and sautee the zucchini coins until some are a little browned.
  3. Pop half the zucchinis in the baking dish and then scatter across all of the feta and half the other cheese. Top with the remaining zucchinis.
  4. In a separate bowl mix together all the remaining ingredients and pour over the top of the zucchinis and bake for about forty minutes or until the cheese and zucchinis are beautifully browned on top.
