Easy leftover roast lamb kebabs

Ingredients
  

  • 1-2 cups leftover roast lamb
  • 1 cup fresh soft lettuce leaves like oak, mignonette, butter
  • 1 carrot grated
  • 1 red capsicum finely sliced
  • 2 ripe tomatoes finely sliced
  • ½ medium cucumber finely sliced
  • ½ cup Tzatziki dip
  • 1 cup grated cheese
  • 1 packet of tortillas or flat breads

Instructions
 

  • Line each tortilla with some tzatziki, then some slices of lamb, then cheese, tomato, capsicum and carrot
  • Roll up into a kebab shape, tucking the bottom over before rolling helps stop it being too messy
  • Serve

Notes

  • You can add chili, Greek yoghurt any sauce you like.
  • The lamb could be heated or eaten cold
